Palapa’s Corporation, franchisor of Palapa’s Surfside Restaurants was conceived in the summer of 2007 and the prototype restaurant and franchisee training facility was opened to rave reviews in Colorado Springs, Colorado, January 18, 2008. The Corporation was the brainchild of a group of four prominent businessmen who saw the value and the future in creating a franchise system, based upon a collection of high-end fine dining restaurants.
Kevin F. McCarthy, CEO and Rolf Anderson, President, are lifelong civic leaders and are well-known in Colorado business and restaurant circles. Ken Hollowell, VP of Franchise Development brings over 30 years of franchise development and marketing experience to the team, and Kevin Moll, VP of Operations is known throughout the U.S. as a leading restaurant consultant with over 34 years of seasoning.
Not only did this team create a ground-breaking first-to-market franchise concept but they also built a world-class Corporate Support Staff when they recruited Master Chef Victor Matthews as Corporate Chef and Master Mixologist Natham Windham to head up the company’s extensive spirits and wine department.
